Learning to Cook From Scratch |2021 Health Goals|

I have decided it’s time to rethink the way we eat around here. We consume a great deal of food but my kids always seem to still be hungry. Snacks, snacks, snacks! My kids can eat their weight in cereal and an hour into homeschool they are fussing for a snack. As a young , working mom of many, I feel I’ve grown a bit too dependent on packaged and processed foods, things that come with easy to follow directions and a handful simple dishes we have over and over. That’s worked just fine by the way, my children are happy and healthy and I stayed sane through the years by choosing what priorities to focus on and scratch cooking just wasn’t it. Fast forward to 2021 and I’m ready to learn how to make more filling and nutritious foods for my family and I.

This week I seasoned and cooked with my first cast iron skillet, It was so great! Let me just say that the cast iron skillet is my new favorite toy, it can make so many things, it’s super non-stick and it can go on the stovetop or in the oven! If you don’t have one of these babies in your life and you cook to feed an army each day, please, please go try it out! I use mine for almost every meal and after 1 weeks I went and got another one because I’d like to use two at a time.

Also this week I made almost every meal from scratch! I made Dutch babies and pancakes for breakfasts. White chicken chili, tacos with fried potatoes, chicken pot pie, chicken marinara with green beans and Dutch babies with fruit for dinner. For lunch we had grilled cheese, Dutch babies and left overs from prior nights dinners. Yes, my kids requested Dutch babies almost every day! We also had cookies, brownies and smoothies for dessert.
